Sweet Potato Skillet Dinner

Serving Size: 4 Time: 25min
Ingredients:
2 T Extra Virgin Olive Oil
1 lb lean ground turkey or beef (if not using meat substitute 4 eggs for protein)
1 clove or 1 tsp minced garlic
½ cup yellow onion, diced
½ cup sweet pepper (any color), diced
1 ½ cup sweet potatoes, diced in to one-inch pieces (approximately one large potato)
Salt and pepper, to taste
Red chili flakes, to taste
½ cup shredded mozzarella cheese (optional)
Serve with guacamole, if desired
1-4 T Water
Equipment and Guide:
Stove top burner
10-12” skillet (Cast iron works best) (You will need a cover if using eggs or cheese)
Cooking spoon
Colander and receptacle for grease
Tablespoon (T)
Teaspoon (tbsp)
2 cup measuring cup

Steps:
Heat the olive oil in the skillet over medium high heat.
Add the garlic and cook until fragrant [if not using meat, skip to cooking the onions and peppers step]
Add the ground turkey or beef to the skillet, break it apart while thoroughly cooking it. This will take about 5 mins.
Drain all but 1 tbsp of grease and return meat to pan
Add the onions and peppers to the skillet and cook until the onions are translucent
Add the diced sweet potato, red chili flakes, salt and pepper to the skillet
Cover the skillet and cook until potatoes are tender. Stir occasionally and add liquid 1 T at a time if they are sticking or you want them to cook faster
This should take about 10 minutes, depending on the size of your potatoes
If you are using eggs, once sweet potatoes are tender, crack each egg into one “corner” of the skillet and cover until they are cooked to your liking.
If you are using cheese, when the sweet potatoes are tender, add the shredded mozzarella and put the lid back on to melt the cheese
Serve with guacamole, if desired.
